Ingredients
  

  • 120 grams Coconut oil refined or not, or vegan butter as close as possible to real butter in taste and qualities
  • 120 grams Apple puree or Vegan plain yogurt used as an egg replacer
  • 70 grams Sugar
  • 20 grams Maple syrup
  • 80 grams Almond flour
  • 52 grams Flour
  • Few drops Vegan butter extract ( essence) Amount depends on the brand which you are using
  • ½ tsp Vanilla extract
  • Pinch Salt

Instructions
 

  • Mix all the wet ingredients in a bowl and whisk until incorporate.
  • Mix in a different bowl all the dry ingredients.
  • Pour the wet mix to the dry mix and stir with a spatula until fully incorporate to a smooth batter.
  • Pour the batter to a financier mold of your choice, if its a silicon mold don't over pour. Leave some room for it to rise a bit while baking
  • Tap the mold gently on the surface to make sure there are no air bubbles.
  • Garnish with few almond sticks in the middle
  • Bake in a preheated oven of 190°C for between 16-20 minutes or until the financiers are golden brown on the edges and might crack in the middle. careful not to burn:)
  • Let completely cool before taking out of the mold

Notes

  1. Its possible to replace the apple puree with aquafaba or  plain vegan yogurt, if you do so you might need to adjust the sweetness to the batter
  2.  You can add any nut to the mixture as long as its chopped and toasted if its inside the mixture, if it will be a garnish on the top then you don't need toast it first the oven will do the job
  3. You can add small fruits like berries to the mixture.
  4. You can replace the butter essence with any other flavor you like
