Easy Vegan Mango Kale Smoothie

So recently I went back to working out in the gym and being more health-conscious again. After quite some time I didn’t exercise, (you know, Covid and that ..) and it feels just wonderful to be back! I like recipes that are healthy and nutritious, and easy to digest. Yet, at the same time, I also like to balance with vegan recipes that I would not exactly categorize as health foods. Like cakes and desserts or fried foods that require oil sometimes. This is because well, there are those days with cravings for certain foods. Especially when I love baking so much.😊

So this mango kale smoothie combination was improvised from the need for something sweet, filling, and cold after a workout. I added kale that is so healthy for us. And really within 5 minutes, you have a thick and delicious smoothie that is a whole healthy breakfast. It’s based on vegan yogurt with mango and kale that contain a good amount of fiber. Cold and refreshing smoothie, with ice cream or sorbet-like texture. It’s also a great way to add kale to your menu if you’re having a hard time with this leafy green. I can have kale pretty much in any form.

Mango is one of my favorite summer fruits. And how not? Super sweet and delicious, and turns out to be very healthy for the digestive system and immune system. Mango contains anti-cancer properties, helps improve your vision, and is rich in powerful antioxidants. A pretty good way to start your day!

Mango Kale Smoothie
Equipment
- High power blender
Ingredients
- 400 gr Mango Frozen or fresh, diced
- 125 gr Vegan yogurt I used soy yogurt
- 2 Tbsp. Fresh lemon juice
- 50 gr Kale
- 14 Ice cubes
- A splash Soy milk
- 2 Tbsp. Maple syrup If the fruit happens to be not sweet enough
Instructions
- Blend all the ingredients except the soy milk, until smooth.
- If too thick add the soy milk and continue to blend to the desired texture.
